can two monitors be "stacked" with this monitor arm?

If by "stacking" you mean one arm holds the screen down and the second above it, then yes, that works because the arms are adjustable differently.

My table top is quite thick at 8 cm. Is the clamp big enough for it?

How deep does the table clamp have to go into the plate? Unfortunately, I only have a depth of just under 4 cm to attach the clamp, as there is a plate in between.

It might be a bit tight, for me the fastening goes about 5 cm into the table.
