Yes, that's possible.
Only up to 7th generation is possible because a 270 chipset is installed. A 370 is required for the 8th generation.

It's 2800 MHz DDR4 RAM so chances are it's a 288 DIMM. I'm not sure if it's the same as the one you're looking for, but I'm sure it's the same.
Unfortunately, I don't know whether there would still be room on the board for an M.2, but what I can say for sure is that there is no more room for SATAIII drives. More importantly, the fan is a disaster. You could just as well run a hairdryer all the time (at full speed of course), that's how loud it is. NO recommendation to buy!!! I returned it exactly because of that. I know the form factor is great and the 1080 is great for the price, but it's just too loud. Normally you can't get a system with a 1080 for this price. If you don't want to assemble it yourself, I recommend a system from Digitec. The fans that are installed are also relatively loud, but you can easily replace them and you have all the standard components in there that can all be replaced for later upgrades. Sorry for the long answer... :-)
